- peanut butter
- earth balance (vegan margarine)
- SEMI SWEET CH. CHIPS (must be made without milk-fat)
- bakers sugar (tends to be better with baking because of how fine the sugar is granulated
- maple syrup
- apple sauce
- sometimes brown sugar
- sometimes cinnamon
- whole wheat flour
- baking powder
- sometimes soy milk
preheat oven to 375
usually, i start with about 3/4 peanut butter... melted, along with half a cup (or less) of earth balance, also melted... i combine the two, and add 2 tablespoons syrup and about a cup and 1/4 of sugar and a bit more than 1/4 a cup of apple sauce and mix well.... now, sometimes, if i do not have any sugar, i use one extra table spoon of syrup and a bit more than 1/2 a cup of apple sauce, and mix well for a more muffin like consistency... then i add brown sugar and cinnamon if i am using them, in any amounts you like... some where very minimal for cinnamon usually... and lastly i add about 2 cups of flour along with 1/2 tablespoon of baking powder... i have taken this mixture and separated it into cookies on a greased cookie sheet, i have put globs into greased muffin tins, and i have thrown the whole mixture into a greased pyrex dish for one giant cookie brownie, so do what you please with this mixture... and the vegan aspects allows all the dough consumption you wish, without salmonella.
unfortunately , the increments are not exact, being that i eyeball most recipes on account of experience... but this is what i am encouraging.. with these ingredients, you have the keys to make the perfect vegan cookies...
if you feel like the peanut butter or sugar sound too heavy don't worry about laying off... but i insist on not being shy with the syrup... its great.
