Cooking with Alcohol: Mojito Marinade

This recipe works for pretty much anything you could want with mojito flavoring. So far, I've tried it with tofu, chicken, and seafood (shrimp, tilapia, and mahi-mahi), and I see no reason to stop there. The results are pretty classy and go perfectly with an actual mojito, creating an ideal meal for the end of summer. A lot of the flavoring is up to you -- Do you want garlic flavor? Do you like spicy food? Do you prefer sweet food? -- so some of the ingredients are optional. Be creative, and make it work!

 

Must-have ingredients:
1/4 cup chopped fresh mint leaves
1/4 cup chopped fresh cilantro
1/4 cup thinly sliced shallots OR diced onions
1/3 cup light rum
3 tablespoons fresh lime juice
1 teaspoon lime zest
1 teaspoon salt

 

Optional ingredients:
4-6 cloves of minced fresh garlic
1/3 cup sugar
2 thinly sliced serrano chili peppers OR 2 tablespoons of crushed red pepper

 

Mix all ingredients together and put in a large (gallon sized) ziploc bag. Then add raw protein -- chicken, shrimp, tofu, whatever -- then put it in the fridge to marinate. You can marinate for as little as 30 minutes, but it will taste significantly better if you leave it for a whole day. Then heat up a pan and cook them on a burner (cooking times will vary based on what you are using). Enjoy!
