We be big pimpin' makin' cheese.

Wisconsin held onto its Dairy State title by producing record setting amounts of cheese last year.  Almost 2.5 billion pounds of cheese was produced in 2006, accounting for 26 percent of the national cheese market. 

Wait, there's more!  Wisconsin is also a leader in the specialty cheese market, producing 26 million pounds, about 45 percent of the national specialty cheese market.
